It’s exciting to talk about something new and vibrant right here in our own neighbourhood! I’ve been hearing a bit of a buzz, and now that Hey Hey Vegan has officially opened its doors on Green Lane, I can’t wait to tell you about it from my perspective.
As someone who appreciates good food and also the growing movement towards more sustainable and ethical eating, I’ve been really curious about what Hey Hey Vegan would bring to Ashton upon Mersey. I’ve seen the subtle changes to the shop front, and the promise of a dedicated vegan eatery has certainly piqued my interest.
What I’m particularly keen on is the idea of a Chinese-inspired vegan menu. I’ve always enjoyed Chinese food, but often, as someone trying to eat more plant-based, it can be a bit of a minefield with hidden ingredients. The thought of being able to order virtually anything on the menu without having to double-check or make special requests is truly appealing.
I’ve heard whispers of a diverse menu, featuring dishes like Singapore Vermicelli, Peking-style hot and sour soup (which sounds incredibly intriguing as a vegan option!), and even “fillet steak” in Cantonese sauce – I’m really keen to see how they achieve that texture and flavour with plant-based ingredients. The idea of mock meats done well is always a draw for me, as it allows for a familiar and satisfying experience without compromising on my values.
I’m imagining stepping inside, perhaps on a quieter evening, and enjoying the aroma of freshly cooked dishes. I hope the atmosphere is welcoming and relaxed, a place where everyone, regardless of their dietary choices, feels comfortable. I’m also really interested to see if they’ll offer takeaway and delivery, as that would be a fantastic option for a cosy night in.
For me, Hey Hey Vegan isn’t just another restaurant opening; it feels like a really positive step for our local community. It caters to a growing demand for plant-based options and offers something unique to our village. I’m genuinely looking forward to my first visit, exploring the menu, and experiencing their take on classic Chinese flavours, all while knowing that every dish is entirely plant-based. It feels good to see Ashton upon Mersey embracing such a modern and conscious culinary offering. I have a feeling Hey Hey Vegan is going to be a fantastic addition to our village, and I’m excited to see it thrive.
